私房菜歎得獎肉餅

          米珠蓮早前到西營盤買海味,發現德輔道西一家樓上私房菜館「芙蓉盛品」,由三十多年經驗的馮志標師傅主理,他曾在利苑、富聲魚翅海鮮酒家工作,經驗豐富。精於粵饌的馮師傅預備了多款拿手的前菜、主食供客人選擇,當中賣相精緻的心形肉餅,獲得《2015年美食之最》肉餅組至尊榮譽金獎。肉餅用上了爽口的豬頸肉、肉味濃的脢頭、油香滑溜的五花腩,加入馬蹄剁成,肉餅中心特別加入了紅菜頭炒飯,口感層次豐富,可配上馮師傅以日式燒汁調成醬汁品嚐,但個人認為單吃肉餅,味道已很足夠。

          另一道古法鹽焗雞,極考工夫,首先製作用來焗雞的香料鹽,師傅將一大鍋粗鹽,與五香粉、八角等拌勻,以高溫炒熱,然後以玉扣紙包裹三斤多重的黃油雞,埋在高溫鹽堆內生焗,烹調過程不僅費時,由於鹽堆須數次加溫,因此要溝入新鹽,以免黃油雞味道過鹹,這心機之作肉嫩鹹香,自然是必吃菜式。其他開胃頭盤,例如藍莓山藥、鮑魚兩食,各有風味,亦值得推介。這裏消費滿一定金額便可包房,午市約一千五百元,晚市為四千元或以上,與坊間酒樓宴價相若。店內晚市私房菜,人均消費約五百元,師傅會預備一湯、四小食、一小炒、蒸魚、鹽焗雞、蔬菜或素菜,以及主食的飯麵,讓大家大快朵頤,價錢相當親民。
